How to freeze homemade dumplings so they stay separate
Folding dumplings takes time, so it makes sense to fold extra. Frozen correctly, they keep for weeks and cook in minutes without thawing.
Freeze them flat first
Dust a tray or plate with flour or line it with parchment. Set the dumplings on it so none touch, then freeze for one to two hours until solid. This step is what stops them from fusing into a lump.
Bag, label, and use within weeks
Move the hard dumplings into a freezer bag, press out the air and label it with the date. They keep their best quality for about two to three months. Eat them straight from frozen. Do not thaw first, since thawed wrappers turn gummy.
Steamed
Steam from frozen for 10 to 12 minutes, depending on size.
Pan-fried
Fry the base until golden, add a splash of water, cover and steam for a few minutes.
Air fried
About 8 to 10 minutes at 370°F. See the air fryer guide.
Choosing the wrapper
Wrappers matter for freezing, since thin skins crack more easily. Our wrapper guide explains the types.
Troubleshooting a frozen batch
If the dumplings stuck together, they were not frozen separately first. Freeze a lump gently, then pry the pieces apart with a knife and cook immediately. If they are dry and white at the edges, that is freezer burn. They are safe, but the texture suffers.
To avoid both problems, use a rigid container or a bag with the air pressed out, and eat within three months.
